Matcha and lime Swiss roll

The return of the Great British Bake Off brought back in-tent memories for 2014 semi-finalist Chetna Makan. She revisits her first success for our sweet-toothed pleasure.

Swiss rollSo the Great British Bake Off is well into its stride on our screens, and it brings back great memories I treasure.

When I think of my time in the tent, one of my favourite moments was the very first bake I made in there. It was a cardamom, coffee and pistachio Swiss roll, which got great feedback from the judges and was also liked by my fellow bakers.

That gave me great confidence to bake in the tent. So I thought it’d be nice to make another Swiss roll, which is packed with flavours.

This is a beautiful and easy recipe to make. I love baking Swiss rolls as they are quite straightforward, but you can play around so much with the fillings and flavours. You can make them into showstoppers or keep them as simple as you like.

Here, I am making matcha sponge, which is light and airy (matcha is powdered green tea). It’s then filled with lime and fresh cream, which gives it a very refreshing flavour. Top this with fresh strawberry to add to the flavour and beautiful colour. Sprinkling with chopped pistachio gives a great finish and crunch to the Swiss roll. Hope you enjoy it.

For the sponge

4 large eggs
100g caster sugar
100g self-raising flour
1 tbsp matcha powder
Pinch of salt

For the cream

400ml double cream
50g caster sugar
Zest of two limes
10-12 strawberries, thinly sliced
25g pistachios, roughly chopped

swiss roll stagesPreheat the oven to 180°C. Grease and line a 23×30 cm Swiss roll tin.

Whisk the eggs and sugar in a bowl until light and fluffy and doubled in size. This could take up to 10 minutes.

In a bowl mix the flour, matcha powder and salt and give it a good mix. Now sieve this mix into the egg mixture and fold it very carefully. Spoon the mixture into the prepared tin.

Bake for 10-12 minutes, or until light and springy to touch. Remove from the oven and turn the sponge out onto another piece of baking paper. Carefully roll the sponge with the sheets and leave it to cool completely.

swiss roll decorationIn a bowl whisk the cream, lime zest and sugar until the right consistency. Unroll the sponge and spread two thirds of the cream on the sponge. Put a layer of strawberry in the middle of the sponge and carefully roll it again.

Pipe the rest of the cream on top of the sponge and place the remaining strawberries on top. Sprinkle the pistachios and serve.
